Now, hear me out when I say that I know that avocado toast is nothing new or revolutionary.
And recently there was a lot of talk online about a certain millionaire’s advice to millennials about “buying smashed avocado for $19 …”.
In the words of Cher from Clueless “as if”.
For those of us who enjoy making our own avocado toast (for much less than $19), I came across this delicious update to the classic.
Because, in recent months I have started to spend more time in the kitchen, I also at the same time don’t really want to spend that much time labouring over a meal. Especially one as simple as avocado toast for breakfast.
That’s where my latest cookbook purchase comes in handy.
The Oh She Glows Every Day cookbook by Angela Liddon has helped me to enjoy being in the kitchen again. The recipes are easy enough to follow and some of them take little to no time to prepare for. It’s that prep work that always gets me with recipes!
And because my fiancé and I eat somewhat differently, this book is a nice way to meet in the middle. I don’t like to describe on our eating styles in-depth, but if I had to, he doesn’t meat or wheat and I do (but with meat only on occasion and it’s usually chicken if that). That’s the simplest way to put it so that people can have a generalized idea about our eating styles. But it truly is (and feels) a lot more complicated than that. Not in a bad way mind you, but you can tell the difference especially when we are in the kitchen.
Which is funny, because we love to cook together. He’s another reason why I started to love cooking again. The time we spend in the kitchen is fun, amusing, and entertaining!
A definite nice thing about the recipes is that they list whether they are gluten, nut, soy, oil, or grain-free! Which is very helpful in case you are making food for someone with allergies or something like that!
So far I have made the following recipes in the book:
- 9-Spice Avocado Hummus Toast
- Fresh Cherry Tomato Salsa
- The Freshest Guacamole
- Sweet Potato, Chickpea, and Spinach Coconut Curry (we make this one all the time!)
- Cashew Sour Cream
After making these five recipes, one thing that I had to keep in mind (especially specifically when it comes to the Cashew Sour Cream) is that some of these recipes are truly alternatives to the products that I am usually used to. Like the Cashew Sour Cream is for dairy sour cream (which I love – but isn’t necessarily the best for me). It just takes some getting used to.
But that Sweet Potato, Chickpea, and Spinach Coconut Curry has now become a bi-weekly, if not weekly staple in our household. We can’t enough of it! And it always goes so quickly! The more I make it, the easier it becomes to prepare it. And I like making slight modifications too as I get more comfortable with the dish.
